Boy, did I make a terrible meal last night! My poor family. Actually, Michael said he liked it and ate every last bite. Maybe because I made chocolate chip cookies for later.
I've been thinking about incorporating more meatless meals. Trying out rice recipes and maybe some day beans.
So, I found a recipe for brown rice and legumes. First of all, it took forever to cook. After 1 1/2 hours the rice was still crunchy and the legumes were really mushy. It had carrots and celery but not enough. I think there was one carrot in my entire helping.
To top it all off it was a huge amount of food! Huge! It filled my large soup pot almost to the top. If I were to guess, it was probably 50 cups worth.
Needless to say we all tried a few bits, yea for us, and licked the salad bowl clean! The cookies were good :)

Julie, I think it's WONDERFUL that you're trying to incorporate more meatless meals. One easy thing we do a lot is cook some lentils and throw them in with spaghetti sauce (homemade or from a jar). The lentils take about 20 minutes to cook. I have some other good recipes that I'll try to email you soon.
I would love to see some of your recipes. I actually thought of you yesterday while I was making it. It sounded sort of like you. Except, yours would have been yummy!
I think I'll try the leftover lentils tonight... we're having spaghetti!
I've been trying eggplant this year...I think I like it!
How are you making it?
The only recipe I've done is frying it first then layering it like lasagna. Really yummy, but probably more calories than using noodles.
It sounds like maybe you needed to cook the rice before making it with the legumes. Hmmm... It's always hard trying new recipes. I'm always worried we won't like them and it will be a waste. But then we get pizza! ;)
Mmmm.. eggplant! I love eggplant. Sometimes I dice it up and put it in (take a wild guess...) spaghetti sauce, though we don't really eat spaghetti all that much! I've also put eggplant with other vegetables in a thai coconut curry, but that's can be a bit more spicy. When we were in Malawi, we made an improvised Moussaka, with eggplant, potatoes, ground beef and a basic white sauce. I'll try to get some recipes together this weekend. Love ya!
I am impressed at your meatless adventure as well. my hubby seems to only eat meat! Those MI boys! LOL
good try on the meal!
I've even just sliced the eggplant and sauteed with olive oil. It's a great veggie side with zucchini and mushrooms.
Megin, that sounds really good!
Since hiking the Grand Canyon and experiencing their Lentil Loaf down in the Bright Angel Ranch, she has been trying to duplicate it. It is delicious! She has a couple recipes although she doesn't feel she has completely replicated it.
We also love eggplant... roasted, stuffed, sliced, in pita... or at least I used to like them in pita.
We have also enjoyed Lentil-Walnut Burgers, Red Lentil Dahl... oh, how about Spaghetti Squash, forked out, drained well and then covered in spaghetti sauce.
I think being more aware of how much meat we cook is a wonderful thing, especially when you learn how inefficient it is and how it can literally be robbing food from the mouths of others.
i'm trying to do the same thing, reduce the amount of meat we eat. convincing the kids is the hardest part, to be honest.
i have a really fantastic (and super easy) beans and rice recipe if you want it.
